We like to call these "the port wine of mushrooms". A flavorful mushroom with earthy and slightly floral notes. They have a nice tender texture when cooked. Stems are often tender enough to be used as well, adding a slight crunch. Great for meats and fish. We love it in tomato dishes too!

This mushroom is really becoming popular due to its brain boosting benefits. Crab-like texture, mild flavor. They make a great "crab" cake, or fried "chicken". Nutty, buttery, kinda crunchy. Stems are edible. Sautee whole, use it whole in a stir fry, roast it, or chop it up. Goes well as a simple side dish, on seafood, with veggies or pasta, or even on a burger.

A cross between the king oyster and regular oyster. The best of both worlds! Meaty texture and nice flavor. Can be chopped to be like a ground meat, shredded for a "Pulled pork", or filleted. Holds up great on the grill, roasted in the oven, or sautéed.

A meaty, nutty mushroom that's either found wild or cultivated. A fan favorite!
Wild harvested can be found in late fall and are usually larger and a bit more flavorful than the cultivated.
Cultivated are still quite delicious, and a lot easier to clean up! Available almost year round.
